We choose cuts others overlook—necks, tails, and collars—because respecting the fish means using more of it. These flavorful, nutrient-rich pieces are where our process begins.

Cure

Next we cut these bright ruby red pieces of sockeye into vertical strips, and cure them in a mix of clean spices for up to 70 hours.

Marinated strips are hung on smoking racks and hot smoked to tender perfection.

I love the salmon jerky. It’s flavorful and tender, and the simple sea salt flavor is my favorite. However, I wish it were made without maltodextrin. Because of this ingredient, I limit how much I consume each month. I would definitely enjoy and purchase it more often if maltodextrin were removed from the recipe.

I already reviewed the items. I gave the item one star b/c I couldn't give it no stars. None of the tastes were to my liking and now I have three more unopened packages. It's not the company, you kept me well informed and tracking worked. It's the product itself. I'm sure some people like it, just not this person!

Best salmon jerky in the world, bar none - has a similar texture to beef jerky and coloring too. The chew is perfect, the flavor on point, and 100% clean ingredients. Using Sockeye salmon really makes all the difference, the quality is unmistakable and A+.

The salmon jerky I’ve tried in the past is oily, odorous, and pink - Fable Fish is tender without being dry, the smell doesn’t overwhelm, the coloring is dark and natural. Oh and it has 30+ grams of protein per bag! 10/10, a true revelation for me and has become a staple snack in my diet.

I enjoy your jerky. it hits the spot. what I find puzzling is one flavor is in the bag ready to eat once the outside bag is open, while 2 flavors are sealed in an additional bag inside the main one..why? it doubles the waste and created additional time needed to get into the bag, case in point am driving home from a workout, I have all three bags with me, I can safely operate a car while I pre opened the main bag, grab a piece of jerky and be good to go, versus struggling w a smaller inner bag.. not logical.

We were given a package as a gift and LOVED IT! So we purchased more and we still love it. We prefer the softer batches but understand this may vary from lot ot lot.
